Cheese curds are a singular delicacy so delicious I’ll forgive them for being a product of Wisconsin. Hey, I can’t help it I had a really annoying art teacher in middle school who was a huge Packers fan so now I have a negative association with all things Cheese Head. Except for the cheese itself, and the curds from whence they come. Fried cheese curds are an amazing, utterly American piece of culinary innovation. You take a curd, already full of fat, and say «You know what this needs? More fat.» And you’d be right about that. 

Cheese curds may not make you live forever, but they sure will make you happy while you’re here. And isn’t that what life is about at the end of the day? Having a good time!
