You know when you go to a hibachi grill and they light the little volcano of onions on fire? I love that. Or when they crack the egg on the side of the spatula? Genius. The good folks who run those grills deserve a raise. I don’t know how much they make to begin with but triple it. They’re some of the hardest working people in show business, giving us food and fun and theater and spectacle all rolled into one. It’s the modern-day chariot races. It’s the best version of dinner theater. It’s one of the only kinds of birthday party I look forward to going to. Forget bowling or escape rooms. Give me pan-Asian cuisine and a show.
