If you told me I could never have cheese again, I would need to take several weeks off of work in order to mourn.
Cheese is the bedrock of a life well lived, if you ask me. I understand that there are people who don’t like it, or can’t have it, but my heart simply goes out to those people, because I am not one of them. Cheese is deeply important to me. Melt a slice of it on a sandwich, and I’m a happy camper. Drench a slice of pizza in it, and I am smiling ear to ear. Set out a cheese board with an array of different selections, paired with some nice breads, jams, and pickles… I am as close to heaven as I will ever be on Earth. This is just my truth. I’ve rarely met a cheese that I didn’t like. I appreciate it in all forms, whether it be stinky or spicy or creamy or goat. Bring it on, and leave me alone with it for a while.
