There is truly nothing quite like a hot bowl of pho on a cold day. When the weather dips below freezing, I want all my meals in soup form. If I’m not eating it with a soup spoon, I don’t want it. 

Pho is particularly comforting because it has so many lovable elements. It of course has the salty, savory, warming broth that feels like it’s replenishing your HP with every slurp. Then there are the chewy noodles, giving you something to entertain your teeth with as you eat. Then there’s the mountain of fresh herbs and lime, adding freshness and zest to each bite. Not to mention the meat- tender, thin, perfectly melting in your mouth. Each bite of pho is a little adventure. You can build each slurp differently, and it’s a fresh experience every time. It might literally be the perfect food. No wonder it’s the national dish of Vietnam. They know they did a good thing there.
