Ah, corn. The staple crop of the Midwest. It’s not uncommon to see fields and fields of it while driving through the middle of the country. Isn’t there even a name for the kind of madness that overtakes you when you’ve been staring at cornfields for too long? Corn hypnosis? Or am I making that up? But despite its potentially mind-altering qualities, corn has so many uses that it’s a little overwhelming to think about. It makes up most of our snack foods in some way or another, we make mazes out of it during Halloween, and we eat it on the cob in the summer. If we didn’t have corn, we wouldn’t have the Midwest. Heck, the US itself would probably crumble.
